Fall in Minnesota means apples… lots and LOTS of APPLES! 
We do it up big here where trips to the orchard in Fall is a ritual familiar to any true Minnesotan. At many of the orchards you get a whole lot more than apples… like hay mazes, wagon rides and jars and jars of fresh honey. (Takes a lot of bees to pollinate all the trees) And then there are the treats available… apple brats, apple cider, apple donuts, carmeled apples on a stick and apple butter.
Naturally, apple harvesting time means the apple recipes and gadgets are in full bloom. After all, we can’t simply eat this many apples straight!
My 5 year old grandson was recently in the joy of discovering the fascinating apple-corer-peeler-slicer that allows you to crank out the longest peel ever. He was in heaven and going through
more apples than we were prepared to deal with… but hey, peeled, sliced apples freeze rather well for baking later!
One of my favorite things to bake, because it’s so easy and like all cinnamon/apple baked goods makes the house smell so good, is my mom’s recipe for Apple crisp. It’s a lot easier if you have the right kitchen gadget for peeling and coring apples but if you’re left with only a paring knife you can still get by. This recipe adjusts to any size pan you desire but here’s what you need for a relatively small 7×11
APPLE CRISP
Fill chosen buttered pan to heaping with peeled sliced apples
sprinkle generously with cinnamon
Mix Together:
1/2 cup sugar
1/2 cup flour
1 Tablespoon butter
1 egg
Drop spoonfuls on top of sliced apples in pan
Bake 45 min – 1 hour at 370 degrees until golden brown
